Located on 1488, Bubba T’s Kitchen serves a “taste of New Orleans without leavin’ town!” Hello Woodlands interviewed franchise owner Iris Cruz to learn all about the local restaurant and their mission to delight guests with authentic Cajun cuisine and Momma Lynn’s authentic family recipes.
The Interview
Share your story. How did the restaurant start?
I came from El Salvador to the United States in 2002. I have worked since then in many restaurants in the Houston area. Back in 2009, I was living in 1488 Magnolia area when I came to apply to what it used to be the Fish Place All You Can Eat Restaurant. I worked there as cashier and manager for 2 years. Later on, Fish Place became Bubba T’s and in the beginning of 2024, a friend of mine told me that Bubba T’s owner was selling franchises. Since I knew and loved the concept, I talked to my husband about it and after many prayers and with my husband’s support, I decided to jump in and bought our first franchise!
What is the atmosphere of the restaurant? Who are your customers, or who do you hope to serve?
Our atmosphere is very welcoming, very friendly. We play some really good Zydeco and oldies music.
Our customers are families, all ages! We have customers that have known Bubba T’s from back in 2015 and have new guests every day. We hope to serve everyone! Everyone is welcome to our establishment.
What do you serve? What makes your menu special and unique?
We have a very special variety of Cajun dishes! Grilled, blackened, boiled and fried seafood. But not only seafood. We also serve chicken and our delicious Angus cheeseburger.
What do you attribute to your success?
Definitely our love for our patrons! We strive for excellence in all we do, starting with our employees, our food quality and flavor. We make sure that everyone feels like family when they come to eat at Bubba T’s!
Tell us about your team.
Our team is made of 8 members, including myself. Neftali has been with the company since 2015 and not only is he loyal to our company, he is one of the best on the grill! For me, it is vital that my team feels safe, valued and supported. So that way, all that is done by them is made with care and love.
How do you give back to and get involved in the local community?
We have spirit nights, catering to churches and neighborhoods around our area. We also have done donations.
What is your favorite meal at Bubba T’s Kitchen?
I love our blackened chicken and shrimp tacos! My husband’s favorite is Mama T’s Jambalaya.
What are the locals ordering?
We sell our grilled, blackened and fried combos equally. For example, shrimp and catfish with 2 sides. The Angus cheeseburger is also one of the favorites.
