FIRST LOOK: Bar Bludorn opens in The Woodlands on October 2

During the opening party held on Thursday, October 1, passed hors d’oeuvres set the tone for what is to come of this much-needed concept near The Woodlands Waterway.
Fresh Oysters, Steak Tartare (egg yolk, horseradish, potato rosti), and Lobster beignets (remoulade, lobster roe) were all a hit. Mini versions of Bar Bludorn’s Cubano (jambon de Paris, roasted pork, raclette cheese pickles, mojo) and Wagyu Tavern Burger (cheddar cheese, tomato, house pickles served with French fries). The hype is real and well deserved.
Samplings of Duck Chitarra pasta (duck confit, duck egg pecorino cream, English peas) and a perfectly executed Steak Frites (10 oz bavette, French fries, sauce au poivre).
The Bar Bludorn beverage program shifts with the seasons, focusing on elevated twists on classic cocktails alongside a curated reserve selection.
Cocktails featured for the night were:
- The Godfather: auchentoshen 12 year scotch amaretto, Angostura.
- Lap of Luxury: Condesa dry gin, raspberry, lime, pasubio, sherry, bitters
Featured wines for the opening party included Avissi – Prosecco, Simonsio – Chenin Blanc, Damien Martin – Bourgogne Blanc, Rose Gold – Rosé Famille Perrin – Côtes du Rhône and Bandini – Malbec.
Samplings of Michter’s Bourbon lineup, Bomberger’s Kentucky straight bourbon, and The Macallan’s 12 Highland Single Malt Scotch whisky.
The cocktail program here expertly balances classic mixology with inventive, seasonal flavors, featuring a few standout programmatic flourishes.
Seasonal Features: The menu shifts to reflect the calendar, showcasing thoughtful flavor profiles like the Seasonal Blueberry Sling, a warm-weather blend of brandy, blueberry compote, almond lemon, and pineapple.
Bar Bludorn is a great addition for elevated bites, happy hours, expertly crafted cocktails, and an extensive wine list, led by Cherif Mbodji (partner and chief operating officer), Aaron Bludorn (Executive Chef and partner), and his wife Victoria Pappas Bludorn (partner who manages marketing and human resources). Great things to come.

On October 2, 2026, Bludorn Hospitality Group (BHG) debuts Bar Bludorn The Woodlands at 25 Waterway Avenue. The opening marks the group’s first restaurant outside Central Houston and the first expansion of Bar Bludorn, their quintessential neighborhood tavern concept, which opened in Memorial in 2024.
Bar Bludorn The Woodlands builds on the spirit of its original Houston location while offering a distinctive menu and new additions, including a private dining room and outdoor patio seating. Guests can expect Bar Bludorn signatures alongside new dishes from chef Aaron Bludorn, inspired by American bistro dining and infused with Texas touches. The space, designed by Gensler, brings forward the same warm, welcoming character of the original location while establishing its own sense of identity for The Woodlands.
“Expanding beyond Central Houston is a big step for us, and Howard Hughes Communities has been a great partner to take it with,” said Aaron Bludorn, chef and partner of Bludorn Hospitality Group. “We are excited to introduce a menu and experience that reflects The Woodlands while still delivering the same Houston-inspired hospitality our guests know from Bar Bludorn in Memorial.”
Bar Bludorn The Woodlands joins Bludorn Hospitality Group’s Texas-based family of restaurants founded by chef Aaron Bludorn alongside partners Cherif Mbodji and Victoria Pappas Bludorn in 2020. The trio operates a growing portfolio of concepts including their flagship restaurant, Bludorn, as well as Navy Blue, Bar Bludorn, Perseid in Hotel Saint Augustine, and a forthcoming San Antonio project. Each BHG restaurant embodies its own distinct identity, with flavors inspired by the Gulf Coast and Texas’s rich cultural diversity at its core.
