Enjoy Locally Made Fudge at Lynn’s Table in Old Town Spring
Nestled in the heart of Old Town Spring, Lynn’s Table serves breakfast, lunch, dinner, ice cream, and dessert – including fudge! Hello Woodlands interviewed owners and Chefs Matthew and Jessica Lynn to learn all about the local restaurant and dessert parlor, and their fresh-made fudge.

What brought you to the area and why Old Town Spring?
We moved to Spring to escape from the hustle and bustle of Houston. Shortly after moving to Spring, Matthew had a dream that we were scooping ice cream in a yellow building with white shutters. A quick search of restaurants for sale in the area, revealed the property known as Ellen’s Cafe was on the market. After several months of negotiations with the seller we purchased the business in May of 2015. In 2020 we purchased the property and changed the name to Lynn’s Table.
How did you start making fudge?
The business included a full service ice cream parlor with a fresh made fudge program in place. Matthew and I have fond memories of our Grandmother’s making fudge as special treats, so it was easy to bring those cherished moments to life through our own signature flavor combinations.
What is unique about your fudge?
Our fudge spends a little more time in the kettle, producing an undeniably creamier product. Additionally, I use childhood memories and experiences from our travels as inspiration for signature flavors such as S’Mores with Fire Roasted Marshmallows, Himalayan Pink Salted Caramel Dark Chocolate, and Apple Cider Gingersnap.
What flavor started it all, and what flavors do you have now?
We begin with the classic milk chocolate and vanilla fudge flavors and infuse them with Madagascar vanilla bean paste, maple extract, fresh brewed espresso, and essential oils such as peppermint and orange and lime. Next we fold in generous amounts of garnish… toasted pecans, almonds, or walnuts; creamy caramel; dried honey crisp apple pieces, and crispy cookie pieces. My personal favorite is Salted Caramel Dark Chocolate, and Matthew will go for anything with Maple…Maple Bacon or Maple Walnut. During the holidays were handcraft several limited release flavors: new this year is Apple Pie and Apple Cider Gingersnap, followed by Pumpkin Praline and Peppermint Bark.
How is the fudge packaged and what sizes and options are sold?
[The fudge is] sold by the quarter pound or in one of our 6 or 8 piece sample boxes, we offer a variety of ways enjoy our fudge personally or as a thoughtful gift for someone special.
What other foods, drinks, offerings does Lynn’s Table offer?
Our Ice cream and Dessert Parlor is full of delicious sweet treats. We chose to feature Tillamook Ice Cream because is free from high fructose corn syrup and dyes as well as being one of the creamiest ice creams you will ever taste. It is the perfect starting point for all our frozen creations! We offer an extensive menu of milkshakes, malts, floats to help satisfy the inner child in all of us. If you want to share with a friend we also have ice cream nachos served with our housemade waffle cone chips or our 4 layer chocolate cake with ice cream! It doesn’t stop there…3 kinds of cobbler, apple pie, key lime pie, lemon meringue, coconut meringue, carrot cake, and Chef Matt’s famous pecan praline bread pudding!
